The alfajor is traditionally a biscuit sandwich filled with Dulce de Leche (milk caramel) and then covered with chocolate or powdered sugar. You can find alfajores with shredded coconut, dark chocolate, peanuts, fruit, and a variety of other fillings and toppings.

Dulce de Leche
Originating in Argentina, Dulce de Leche has long been one of Latin America's favorite treats, and is now being enjoyed all over the world. Dulce de Leche is also referred to as manjar, manjar blanco, require, or cajeta.
Making traditional Dulce de Leche is fairly straightforward; milk is slowly heated with sugar, then gently stirred until it thickens to a consistency similar to caramel. However, the control you can achieve over its consistency is what makes Dulce de Leche such a versatile product. It can be used as a filling for puff pastries, a topping for cakes, to flavor ice-cream, on pancakes, as a dip for fruit, on bread, in coffee, and of course, it sits perfectly in alfajores. Dulce de Leche truly tastes great on just about everything!
